Carrots Carrot Cake…. (With no nuts - no squirrels here!)

Here's a recipe for Carrots' Carrot Cake, Bake Safe, Bake Well... and Happy Baking!


What you'll need:

1 cup white sugar

1 cup brown sugar

2 cups all-purpose flour  

1 teaspoon salt  

2 teaspoons ground cinnamon  

1 teaspoon baking powder

1 teaspoon Bicarbonate of soda

1 cup vegetable oil  

4 eggs  

3 cups finely grated carrots  

1  package cream cheese  

 1/4 cup double cream  

 1 teaspoon vanilla extract  

 2 1/2 cups sifted icing sugar  

 2 * 9 inch cake pans


What to do:


35 mins @ 160 c in a fan assisted oven otherwise 180c <- check after this amount of time but should be cooked… just give it a stab! <- gently of course!

Preheat oven to160/180. Grease cake pans.

Combine the sugar, flour, salt, cinnamon, bicarb soda, baking powder, oil. With an electric mixer beat in the eggs one at a time. Stir in the carrots . Pour the batter into the prepared baking pan.

Put in the oven…. Remember check after 35 mins!! 

To Make cream cheese Frosting: With an electric mixer blend the cream cheese and cream. Add the vanilla and icing sugar – fill and decorate
